Quelites< / lambs quarters
Quelites (or lambs quarters) is a spinach-like green that grows all over the Taos Valley. The rule is to pick and eat it when it is young and still has rounded leaves. If the leaves have points, it’s going to be too bitter to eat.
In the early spring you’ll see wild asparagus growing along the acequias and their lateral ditches. They are ideal when quite young and close to the ground. When harvesting, try to cut it off just below the soil line. This will encourage more growth from the plant as the days progress and in subsequent seasons.
