Arroz Dulce (Sweet Rice)

This dish is a traditional dessert that is made when something sweet is wanted, but not too sweet. This recipe can be made with white or brown rice.

½ cup cooked rice
½ cup sugar
½ teaspoon salt
½ teaspoon ground nutmeg
2 quarts milk
1 teaspoon vanilla
¾ cup raisins

Mix the rice, sugar, salt and nutmeg in a shallow 2 ½ quart baking dish. To keep from spilling milk, add one of the quarts, stirring the mixture, then add the second quart when the dish is placed in the oven preheated to 325 degrees

Bake for 2 ½ hours, stirring twice during the first hour. Stir the brown crust into the pudding several times during the remainder of the baking time. Add the raisins 30 minutes before the pudding is done, then allow for the crust to form again.

Serve with cream if desired.

Makes 6-8 servings.
