Did you know that guacamole left to stand more than 30 minutes before eating loses its delicate flavor? That’s why it’s hard to take store-bought guacamole seriously. Make it at the last minute and stir it with a gentle hand.

¼ small red onion, chopped
1 tomato, seeded and cut into chunks
2 large avocados
1 Tablespoon olive oil
3 Tablespoons lime juice
Salt and pepper
1 fresh jalapeño, seeded and finely chopped
optional: 1-2 Tablespoons fresh chopped cilantro
or parsley

Halve the avocados, remove the pit, run cross-hatch marks in the flesh with a knife and scoop out the cubed avocados. Combine with all the ingredients and eat immediately with either corn chips, as a garnish, or tossed with a spring salad.
